Banana Chocolate Chip Muffins

I have been playing with "gluten free" flours and everyone is such willing taste testers!



    3 large ripe bananas
    1/4 cup date sugar
    1/4 cup coconut palm sugar
    1/2 tsp xanthan gum
    1 egg
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    **1 1/2 cups light flour blend
    1/3 cup unsweetened applesauce 
    1 cup Chocolate chips 

Mash bananas 
Add sugars, egg and applesauce
Add dry ingredients and mix well
Add chocolate chips

Bake 375° for 18 min

**Light Flour Blend for Muffins and cakes
3 cups Brown Rice
3 cups White Rice
1 1/2 cups Tapioca flour
1 1/2 cups Potato starch
